Cha Yeep Dan (Cantonese for “tea leaf egg”) - A popular snack in Asia,

the method – 1. boil the eggs – it doesn’t matter if it’s for 1 minute or 5 minutes. the idea is to cook the outer egg so that it is no longer liquid. 2. take the eggs out and crack the shell with a metal spoon to create a cobweb of cracks. 3. keeping the shells on, you put the eggies back in the pot with the tea and soy sauce. 4. simmer at the lowest heat for a couple of hours. 5. remove the shell and you will be rewarded with a beautiful marbled egg. 6. eat.

tea egg recipe – this is a basic recipe. once you’ve made it, you can adjust the flavorings to suit your own taste. serve the tea eggs with some of the tea liquid as a dipping sauce. i like to drizzle some toasted sesame oil into the sauce.

1 dozen large eggs (i buy jumbo eggs, i like BIG things what can i say)

black tea bags or 2-3 tablespoons of loose black tea (i’ll use 6 lipton tea bags)

1/4 cup soy sauce

2 tablespoon chinese 5 spice powder and 2 star anise

or 4 star anise and 1 cinnamon stick

1 tablespoon sea salt
